Amish Pasta Salad
This traditional Amish pasta salad is a creamy, flavorful side that’s ideal for potlucks, picnics, or family dinners. It combines tender pasta with chopped hard-boiled eggs, crisp vegetables, and a distinctive sweet and tangy dressing that makes it stand out from typical pasta salads.
Ingredients
For the Salad:
- Medium shell pasta — 1 (16 oz) package
- Hard-boiled eggs, chopped — 5
- Celery, diced — 3 stalks
- Small sweet onion, diced — 1/2
- Pimentos, drained — 1 (2 oz) jar
- Green bell pepper, diced — 1
For the Dressing:
- Sweet pickle relish, drained — 3 tablespoons
- Garlic powder — 1/2 teaspoon
- Celery seed — 1/2 teaspoon
- Mayonnaise — 1 1/2 cups
- Sour cream — 1/2 cup
- Granulated sugar — 1/4 cup
- Yellow mustard — 3 tablespoons
- Apple cider vinegar — 2 teaspoons
- Kosher salt — to taste
- Freshly ground black pepper — to taste
Instructions
1️⃣ Cook the Pasta:
Boil the medium shell pasta in salted water according to package instructions until al dente. Drain thoroughly, rinse under cold water to cool and stop cooking, then drain well again.
2️⃣ Make the Dressing:
In a large bowl, whisk together the drained sweet pickle relish, garlic powder, celery seed, mayonnaise, sour cream, sugar, yellow mustard, and apple cider vinegar until smooth and evenly mixed.
3️⃣ Combine the Salad:
Add the cooled pasta, chopped hard-boiled eggs, celery, sweet onion, pimentos, and green bell pepper to the dressing. Stir gently but completely to coat all ingredients.
4️⃣ Season and Chill:
Season the salad with salt and pepper to your liking. Mix once more, cover, and refrigerate for at least 1–2 hours to allow flavors to blend beautifully before serving.
