Imagine this: a chilly autumn morning, the scent of cinnamon-spiced apples wafting through your kitchen, and you’re snuggled up with a warm dish of baked oatmeal that feels like a hug. This Amish-style Apple Cinnamon Baked Oatmeal has become my all-time favorite—perfect for hectic mornings, lazy Sundays, or even breakfast-for-dinner nights.

The recipe landed in my inbox from my cousin Julianne (randomly, at 3:53 PM—still not sure why), and I made it that very evening. One bite in, and I knew it was going straight into my regular rotation. Best part? You can prep it the night before and just toss it in the oven in the morning—plenty of time to hit snooze a couple more times.

1. Prepare Your Dish

3. Whisk the Wet Ingredients
In a separate bowl or large measuring cup, mix milk, eggs, and 1 tsp vanilla extract until well combined.

4. Combine Everything
Pour the wet ingredients into the dry mixture. Add your melted butter or coconut oil and stir until everything is well incorporated. It will look quite liquidy—that’s totally normal.

5. Assemble & Bake
Spread the diced apples evenly on the bottom of the prepared baking dish. Pour the oat mixture on top.
If you’re prepping this ahead of time, cover and refrigerate overnight.
Bake at 325°F (160°C) for 35–45 minutes, until the top is golden and the center is just set. A slight wobble in the middle is okay—it will continue to set as it cools.
