This Apple Zucchini Bread brings together the best of the garden in one delicious, moist, and fragrant loaf. With the cozy warmth of cinnamon and nutmeg, and the sweetness of both white and brown sugars, it’s perfect as a breakfast slice, an afternoon snack, or a sweet pairing with coffee or tea. This recipe yields two loaves—ideal for sharing or freezing for later!

Instructions

Step 1: Preheat & Prepare Pans
Set your oven to 350°F (175°C). Lightly grease two 9×5-inch loaf pans with butter or nonstick spray and set them aside.

Step 2: Mix the Wet Ingredients
In a large bowl, combine the granulated sugar, brown sugar, eggs, canola oil, and vanilla extract. Whisk until the mixture is smooth, light, and well blended.

Step 3: Combine the Dry Ingredients
In a separate bowl, sift together the flour, baking soda, salt, cinnamon, and nutmeg. Sifting ensures the ingredients are well mixed and removes any lumps.

Step 4: Combine Wet and Dry
Gradually add the dry ingredients to the wet mixture. Stir with a spatula or spoon just until everything is combined—avoid overmixing to keep the bread tender.

Step 5: Add Zucchini and Apple
Fold in the shredded zucchini and diced apples gently, mixing just enough so they’re evenly distributed throughout the batter.

Step 6: Fill Loaf Pans & Bake
Evenly pour the batter into the prepared pans. Bake for 35 minutes, then lightly tent the loaves with foil to prevent over-browning. Continue baking for an additional 20–25 minutes, or until a toothpick inserted into the center comes out clean.

Step 7: Cool & Serve
Let the loaves cool in the pans for about 10 minutes, then carefully remove them and place on a wire rack to cool completely before slicing.
