Ingredients:

IngredientQuantity
All-purpose flour⅔ cup
Granulated sugar1 tablespoon
Cornmeal1 tablespoon
Baking powder2 teaspoons
Whole milk⅔ cup
Chopped white onions (about 1 medium)2 cups
Kosher saltTo taste
Freshly ground black pepperTo taste
Oil for fryingEnough for ½-inch depth

Instructions:

1. Mix the Batter:
In a medium mixing bowl, combine the flour, sugar, cornmeal, and baking powder. Gradually whisk in the milk until you get a smooth, lump-free batter.

2. Stir in Onions and Seasoning:
Fold in the chopped onions, making sure they are well coated. Season the mixture with salt and black pepper to your preference.

3. Heat the Oil:
Pour about a half-inch of oil into a large skillet or Dutch oven and heat it over medium-high heat. Use a thermometer to monitor the temperature—it should reach 375°F (190°C) before frying.

4. Fry the Fritters:
Once the oil is hot, carefully spoon in heaping tablespoons of the batter. Lightly flatten each one with the back of the spoon if needed. Avoid overcrowding the pan.

5. Cook Until Crisp and Golden:
Fry each side until the fritters are golden brown and crispy, flipping once during cooking to ensure even browning.

6. Drain and Serve:
Use a slotted spoon to remove the fritters from the oil and place them on a plate lined with paper towels to absorb excess grease. Serve immediately while hot and crispy.
