Instructions
1️⃣ Preheat and Prep
Set your oven to 375°F (190°C). Line a large baking sheet with parchment paper for easy cleanup.
2️⃣ Cook the Bacon
In a skillet over medium heat, fry the bacon until crisp—about 6–8 minutes. Transfer to a paper towel-lined plate. Keep 2 tablespoons of the bacon drippings in the skillet. Once cool, chop the bacon into small bits.
3️⃣ Sauté and Brown
Add the diced onion to the reserved bacon fat and cook over medium heat for 4–5 minutes, until soft. Stir in the garlic and cook for 1 more minute.
Raise the heat to medium-high, add the ground beef, season with salt and pepper, and cook until browned and fully cooked—about 5–6 minutes. Drain off any grease.
4️⃣ Fill the Bombs
Separate the biscuit dough into 8 pieces. Flatten each into a 4-inch circle using a rolling pin or your hands.
Spoon about 2 tablespoons of beef into the center, then layer with chopped pickles, a drizzle of mustard, 1 tablespoon of shredded cheese, and a bit of the bacon.
Fold the dough up and over the filling, pinching the edges to fully enclose it into a sealed ball.
