Baked Greek Lemon Chicken

This flavorful chicken dish features tender, juicy thighs marinated in a bright and zesty lemon-herb mixture, perfect for a simple and delicious meal.

Ingredients:

Instructions:

  1. Place the boneless, skinless chicken thighs in a large bowl or a resealable ziplock bag.
  2. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, Dijon mustard, oregano, thyme, dill, paprika, salt, and black pepper until all the ingredients are well combined to form the marinade.
  3. Pour the prepared marinade over the chicken in the bowl or ziplock bag. Ensure that all the chicken pieces are thoroughly coated with the marinade.
  4. Cover the bowl tightly with plastic wrap or seal the ziplock bag, removing any excess air.
  5. Place the marinated chicken in the refrigerator and let it marinate for at least 2 hours, or up to 6 hours for a more intense flavor.
  6. When you are ready to bake the chicken, preheat your oven to 350 degrees F (175 degrees C).
  7. Arrange the marinated chicken thighs in a single layer in a large baking dish. Pour any remaining marinade from the bowl or bag over the top of the chicken.
  8. Bake the chicken in the preheated oven for 40 minutes, or until the internal temperature of the thickest part of the chicken reaches 165-175 degrees F (74-79 degrees C). Use a meat thermometer to ensure accuracy.
  9. For extra color and a slightly crispy top, you can broil the chicken for the last 2-3 minutes of cooking. Keep a close eye on the chicken while broiling to prevent burning.
  10. Remove the baked Greek lemon chicken from the oven and let it rest for a few minutes before serving. Enjoy!
