1. Preheat and Prep
Set your oven to 375°F (190°C). Rinse and scrub the russet potatoes thoroughly. Slice them into fries—about 1/4 to 1/2 inch thick, depending on your preference.
2. Season the Fries
Place the cut potatoes in a large bowl. Drizzle with melted duck fat and sprinkle with Lawry’s seasoned salt. Toss well to make sure every fry is evenly coated.
3. Bake – Part One
Arrange the fries in a single layer on a large baking sheet. (Use two sheets if needed to prevent overcrowding, which is key to getting that crispy finish.) Bake for 20 minutes at 375°F.
4. Bake – Part Two (Get Crispy!)
After 20 minutes, increase the oven temperature to 450°F (230°C). Continue baking for another 25–30 minutes, or until the fries are deeply golden and perfectly crisp. Keep a close eye toward the end to avoid overbrowning.
