Step 1: Coat the Beef
Place the stew meat in a large resealable plastic bag. Add the flour and seasoning salt, then shake until each piece of meat is thoroughly coated.

Step 2: Brown the Beef
Heat the olive oil in a large skillet over medium-high heat. Add the floured meat and sear on all sides until golden brown. Transfer the browned beef to your slow cooker and sprinkle with black pepper.

Step 3: Sauté the Onions
Using the same skillet, add the diced onion and cook for about 2 minutes, scraping up any flavorful browned bits. Add the onions to the slow cooker.

Step 4: Deglaze the Pan
Pour the Worcestershire sauce, water, and beef demi-glace into the skillet. Whisk to blend and scrape the bottom to release all the rich drippings. Once the mixture is smooth, remove it from heat.

Step 5: Add the Vegetables
Place the diced potatoes, sliced carrots, celery, and bay leaves into the slow cooker on top of the beef and onions.

Step 6: Combine Everything
Pour the prepared Worcestershire-broth mixture from the skillet over the ingredients in the slow cooker, coating everything evenly.

Step 7: Slow Cook Until Tender
Cover and cook on low for 8 hours, or until the beef is tender enough to fall apart and the vegetables are perfectly cooked.
