🍪 Oatmeal Scotchies Recipe

Ingredients:

IngredientQuantity
All-purpose flour1 ½ cups
Baking soda1 teaspoon
Salt1 teaspoon
Ground cinnamon½ teaspoon
Unsalted butter (softened)1 cup (2 sticks)
Brown sugar (packed)1 cup
White sugar½ cup
Large eggs2
Molasses1 tablespoon
Vanilla extract1 ½ teaspoons
Old-fashioned oats3 cups
Butterscotch chips1 ½ cups

👩‍🍳 Instructions:

1. Mix the Dry Ingredients

In a medium mixing bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside for later.

2. Cream the Butter and Sugars

In a large bowl, beat the softened butter, brown sugar, and white sugar using an electric mixer until the mixture is light and fluffy.

3. Add Eggs, Molasses, and Vanilla

Beat in the eggs, then add the molasses and vanilla extract. Mix well until smooth, scraping down the sides of the bowl as needed.

4. Incorporate the Dry Mix

Gradually add the flour mixture to the wet ingredients, mixing on low speed just until everything is incorporated. Be careful not to overmix the dough.

5. Stir in Oats and Butterscotch Chips

Fold in the oats and butterscotch chips by hand. The dough will be thick and hearty at this stage.

6. Chill the Dough

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This step helps control spreading and enhances flavor.

7. Preheat and Prepare Baking Sheet

Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper for easy removal and cleanup.

8. Shape and Bake

Scoop the chilled dough into balls (1.5 to 2 tablespoons each) and place them a few inches apart on the prepared baking sheets. Bake for 11–13 minutes, or until the edges are golden and the centers still look slightly soft.

9. Cool and Serve

Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to finish cooling completely. This helps them set without falling apart.
