This Chicken Bacon Ranch Potato Casserole checks all the boxes for a comforting weeknight meal. It’s loaded with tender potatoes, rotisserie chicken, crispy bacon, and a rich blend of cheeses—all brought together with creamy ranch dressing. Whether you’re feeding a crowd or looking for a cozy family dinner, this dish delivers big flavor with minimal fuss.

👨‍🍳 Directions

1. Prep & Mix the Ranch Sauce

Preheat oven to 350°F (175°C).
In a small bowl, whisk together the mayonnaise, milk, and ranch seasoning until smooth. Set aside.

2. Boil the Potatoes

Place the diced potatoes in a large pot of water. Bring to a boil, reduce heat, and simmer for 10–12 minutes, or until just fork-tender. Drain and set aside.

3. Cook Bacon & Aromatics

In a large oven-safe skillet (12-inch recommended), cook the chopped bacon over medium-high heat until crispy. Transfer to a plate lined with paper towels.
Pour off excess fat, leaving about 2 tablespoons in the pan.
Add the onion and sauté for 2–3 minutes, then stir in the minced garlic and cook for another 30 seconds.

4. Build the Casserole

To the skillet, add the parboiled potatoes, chicken, bacon, and spices—garlic powder, paprika, red pepper flakes, salt, and pepper.
Stir in half of the shredded cheese (both cheddar and gouda).
Pour in the ranch mixture and gently toss everything together until well coated.

5. Top & Bake

Sprinkle the remaining cheese over the top of the casserole.
Bake uncovered for 20–25 minutes, or until bubbly and golden brown on top.

6. Cool & Serve

Let rest for a few minutes before serving. Pair with a crisp green salad or steamed vegetables for a balanced plate.
