Swedish Meatball Noodle Bake

Ingredients

Meatballs

  • Olive oil – 2 tablespoons
  • Ground beef – 1 pound
  • Large egg, lightly beaten – 1
  • Breadcrumbs – ½ cup
  • Onion, finely grated – ½
  • Garlic powder – ½ teaspoon
  • Ground nutmeg – ¼ teaspoon
  • Kosher salt – 1 teaspoon
  • Freshly ground black pepper – ½ teaspoon

Casserole

  • Egg noodles – 2½ cups
  • Beef broth – 1 cup
  • Worcestershire sauce – 1 tablespoon
  • Heavy cream – 1 pint
  • Swiss cheese, shredded – 1½ cups
  • Fresh parsley, chopped – for garnish
  • Kosher salt and black pepper – to taste

Instructions

Step 1: Prepare the Oven
Heat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with nonstick spray and set it aside.

Step 2: Mix the Meatballs
In a large bowl, gently combine the ground beef, breadcrumbs, egg, grated onion, garlic powder, nutmeg, salt, and pepper until just mixed. Form the mixture into meatballs using about 1½ tablespoons per ball.

Step 3: Brown the Meatballs
Warm the olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides, working in batches if needed. They don’t need to be fully cooked. Remove and set aside.

Step 4: Cook the Noodles
Boil the egg noodles in salted water, cooking them about 2 minutes less than the package directions for al dente. Drain and set aside.

Step 5: Make the Sauce
Using the same skillet, add the beef broth, heavy cream, and Worcestershire sauce. Stir well, scraping up any browned bits from the pan. Simmer for about 10 minutes until the sauce thickens slightly. Season with salt and pepper, then remove from heat.

Step 6: Assemble and Bake
Spread the cooked noodles evenly in the prepared baking dish. Arrange the meatballs over the noodles, then pour the sauce evenly on top. Sprinkle with shredded Swiss cheese. Bake for about 20 minutes, or until the cheese is melted and bubbling.

Step 7: Serve
Allow the casserole to rest for 5 minutes before serving. Finish with chopped parsley and enjoy warm.
