Step 1: Make the Dough
In a large bowl, mix together the yogurt, warm water, and vegetable oil. Sprinkle in the dry yeast and stir to combine. Gradually incorporate the flour and salt, mixing until a soft dough forms. Knead on a lightly floured surface for around 10 minutes, until smooth and elastic. Place the dough back in the bowl, cover it with a damp cloth, and allow it to rise in a warm spot for about 45 minutes or until doubled in size.
Step 2: Divide & Roll Out
Once the dough has risen, turn it out onto a floured surface and divide it into four equal portions. Shape each into a ball, then roll each one out into a rectangle.
Step 3: Add the Filling & Roll
Spread ricotta evenly across each rectangle. Starting from the longer edge, roll the dough tightly into a log. Slice each log into pieces roughly two fingers wide.
Step 4: Arrange & Rise Again
Place the roll slices cut-side up in a greased round baking pan, leaving a bit of space between each piece. Cover with a damp cloth and let rest for another 15 minutes for a second rise.
Step 5: Make the Cream Topping
In a separate bowl, whisk together the eggs, yogurt, melted butter, and salt until the mixture is smooth.
