Spiced German-Style Lebkuchen Bars

Ingredients

For the Bars

For the Glaze (Optional)

Tips & Notes

  • Candied peel is traditional; if skipping it, soak raisins in orange juice for 10 minutes.
  • Avoid blackstrap molasses—milder varieties give a smoother flavor.
  • These bars taste best after a day, allowing spices to mellow and the texture to soften.

Instructions

Step 1: Prep Oven & Pan
Preheat oven to 350°F (175°C). Grease a 9×13-inch pan and line it with parchment paper.

Step 2: Mix Dry Ingredients
Whisk together flour, baking powder, baking soda, cinnamon, ginger, cloves, allspice, and salt. Set aside.

Step 3: Cream Butter & Sugar
Beat softened butter and brown sugar until light and fluffy. Add molasses, eggs, and orange zest, mixing until smooth.

Step 4: Combine & Fold
Gradually stir in the dry ingredients until just combined. Fold in candied peel (or fruit) and nuts.

Step 5: Bake
Spread batter evenly in the prepared pan. Bake 25–30 minutes, until edges are firm and a toothpick inserted in the center comes out clean. Let cool completely.

Step 6: Glaze (Optional)
Whisk powdered sugar with lemon juice until smooth. Drizzle over cooled bars and allow 15–20 minutes to set before slicing.

Serving & Storage

  • Flavors deepen if allowed to sit 24 hours.
  • Store in an airtight container at room temperature for up to 2 weeks.
  • Freeze unglazed bars for up to 2 months; thaw and add glaze before serving.
  • For gifts, wrap slices in parchment, tie with twine, and place in a decorative tin.
