Dorito Casserole

This Dorito Casserole brings together bold Tex-Mex flavors and the crunch of Nacho Cheese Doritos into a cheesy, hearty dish that’s perfect for busy weeknights or casual gatherings. With seasoned ground beef, creamy sour cream, black beans, corn, salsa, and layers of melty cheese, each bite delivers a punch of flavor and a satisfying crunch that the whole family will love.


Dorito Casserole

Ingredients:

Onion, diced½ cup
Taco seasoning1 packet (or 3 tbsp homemade)
Thick salsa1½ cups
Sour cream1 cup
Corn1 cup
Black beans½ cup
Shredded cheese2 cups
Crushed Doritos (Nacho Cheese)4 cups

For Topping:

Tomatoes, diced½ cup
Black olives, diced½ cup
Green onions, sliced¼ cup

Instructions:

  1. Preheat Oven & Prepare Pan: Heat your oven to 375°F (190°C). Lightly coat a 9×13-inch baking dish with cooking spray and set aside.
  2. Cook Meat & Onion: In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and the onions are soft, about 4–5 minutes. Drain off excess grease.
  3. Season the Beef: Stir in taco seasoning and cook for 1 more minute to let the spices bloom and coat the beef.
  4. Add Salsa, Beans & Corn: Mix in the salsa, corn, and black beans. Stir until the mixture is fully combined and warmed through.
  5. Stir in Sour Cream: Remove the skillet from the heat and mix in the sour cream until creamy and well-blended.
  6. Layer the Casserole:
    • Start with ⅓ of the crushed Doritos spread over the bottom of the baking dish.
    • Spoon and spread half the meat mixture over the chips.
    • Sprinkle ⅓ of the shredded cheese over the top.
    • Repeat with another ⅓ Doritos, the remaining meat mixture, and another ⅓ cheese.
    • Finish with the last ⅓ Doritos and top with the final layer of cheese.
  7. Bake: Cover the dish tightly with foil and bake for 30 minutes. Remove the foil and bake for another 15 minutes until the top is bubbly and golden.
  8. Top & Serve: Once out of the oven, sprinkle on diced tomatoes, black olives, and sliced green onions. Serve hot with optional toppings like guacamole, salsa, or extra sour cream on the side.

This casserole is a fun, flavorful twist on classic comfort food—easy to make, easy to love, and sure to be requested again and again!
