Oven-Baked Spinach and Feta Breakfast Casserole

Start your morning with this hearty and flavorful breakfast casserole. With the earthy taste of fresh spinach, the briny bite of feta, and the creamy melt of mozzarella, this dish is both wholesome and delicious. It’s ideal for weekend brunches, festive mornings, or prepping ahead for a no-fuss weekday breakfast.


🧂 Ingredients:

Small onion, finely chopped1
Garlic, minced2 cloves
Fresh spinach, chopped5 ounces
Large eggs8
Milk1 cup
Salt½ teaspoon
Black pepper¼ teaspoon
Nutmeg¼ teaspoon
Feta cheese, crumbled1 cup
Mozzarella cheese, shredded½ cup

👩‍🍳 Instructions:

Step 1: Prepare and Sauté
Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with olive oil. In a skillet over medium heat, warm the olive oil, then add the chopped onion and minced garlic. Sauté for about 5 minutes, until the onion is soft and translucent.

Step 2: Cook the Spinach
Stir the chopped spinach into the pan and cook for 2–3 minutes, until wilted. Remove from heat and let cool slightly.

Step 3: Mix the Egg Base
In a large bowl, whisk together the eggs, milk, salt, pepper, and nutmeg until smooth. Add the sautéed spinach mixture, feta, and half the mozzarella. Stir gently to combine.

Step 4: Assemble and Bake
Pour the egg mixture into the prepared baking dish and spread it evenly. Sprinkle the remaining mozzarella cheese over the top. Bake for 35–40 minutes, or until the center is set and the top is golden and slightly puffed.

Step 5: Cool and Serve
Let the casserole sit for a few minutes before slicing. Serve warm and enjoy!
