Bacon-Wrapped Envelope Roast

This bacon-wrapped Envelope Roast is a rich, tender, and flavorful way to prepare chuck roast. The slow roasting method combined with a bacon exterior keeps the meat incredibly juicy while infusing it with smoky, savory flavor. Perfect for weekend dinners or a memorable family meal.

Instructions:

  1. Preheat Oven: Set your oven to 325°F (165°C).
  2. Dry and Season: Pat the roast dry using paper towels. In a small bowl, mix garlic powder, onion powder, thyme, paprika (if using), salt, and pepper. Rub this seasoning mixture evenly over the entire surface of the roast.
  3. Sear for Flavor: Heat olive oil or butter in a Dutch oven or heavy skillet. Sear the roast on all sides—3 to 4 minutes per side—until it forms a golden crust. This locks in moisture and deepens flavor.
  4. Wrap in Bacon: Lay bacon strips out on a cutting board, slightly overlapping. Place the seared roast on top and wrap the bacon around it. Tuck in the ends or tie with kitchen twine if needed.
  5. Build the Base: Place the wrapped roast back into the skillet. (Optional) Add sliced onions and smashed garlic around the roast. Pour broth or red wine into the pan for added depth.
  6. Roast Low and Slow: Transfer the pan to the oven. Roast for 2½ to 3 hours, basting with the juices a couple of times during cooking. For medium-rare, aim for an internal temp of 145°F (63°C); for medium, 160°F (71°C).
  7. Let It Rest: When done, remove from the oven and let the roast rest for 15–20 minutes. This helps the juices redistribute.
  8. Slice and Serve: Cut the roast against the grain and spoon pan juices over each slice before serving.

Serving Tips:
Pair with mashed potatoes, roasted veggies, or crusty bread to soak up the flavorful drippings. This dish is all about comfort and richness—ideal for any time you want to serve a standout main without much fuss.
