Loaded Taco Beef Casserole

This flavorful casserole brings all the best parts of a taco night into one easy, satisfying dish. Layers of seasoned beef, black beans, corn, crunchy tortilla chips, and melted cheddar cheese come together in a hearty bake the whole family will enjoy.


Ingredients

Crushed tortilla chips2 cups
Shredded cheddar cheese2 cups

Chopped fresh cilantro (optional)¼ cup

Instructions

1. Preheat Oven and Cook the Beef
Preheat your oven to 350°F (175°C). In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.

2. Add Seasoning and Salsa
Stir the taco seasoning and salsa into the cooked beef. Let it simmer for a few minutes until slightly thickened.

3. Combine with Beans and Corn
In a large mixing bowl, combine the beef mixture with the black beans and frozen corn. Mix thoroughly.

4. Layer the Casserole

  • Spread half of the crushed tortilla chips in the bottom of a 9×13-inch baking dish.
  • Evenly layer the beef, bean, and corn mixture over the chips.
  • Sprinkle half of the shredded cheddar cheese over the beef layer.
  • Add the remaining crushed chips, then top with the rest of the cheddar cheese.
  • Finish by sprinkling sliced olives and chopped green onions over the top.

5. Bake
Place the dish in the preheated oven and bake for 20–25 minutes, until the cheese is melted and bubbly and the casserole is fully heated through.

6. Cool and Serve
Let the casserole cool slightly before serving. Garnish with chopped fresh cilantro, if desired.
