Ground Beef, Potato & Mushroom Casserole with Crispy Onion Topping
A cozy, satisfying dish loaded with layers of tender potatoes, savory ground beef, and a creamy mushroom sauce—finished with a golden crunch of French fried onions. Perfect for weeknights, potlucks, or anytime you need some comfort on a plate.


Ingredients:

Instructions:

Step 1: Preheat the Oven
Set your oven to 375°F (190°C) and allow it to fully preheat.

Step 2: Prep the Veggies
Peel and thinly slice the potatoes. Dice the onion and bell pepper, and mince the garlic.

Step 3: Cook the Beef Mixture
In a skillet over medium heat, brown the ground beef. Once it starts to cook through, stir in the diced onion, bell pepper, and garlic. Continue cooking until the meat is no longer pink and the vegetables have softened. Season with salt and pepper to taste. Drain off any excess grease.

Step 4: Make the Sauce
In a separate mixing bowl, stir together the cream of mushroom soup and sour cream until well blended.

Step 5: Layer the Casserole
Lightly grease a 9×13-inch baking dish. Assemble in layers:

  • Start with a layer of sliced potatoes.
  • Spoon over a portion of the beef mixture.
  • Spread a layer of the creamy mushroom sauce.
    Repeat the layers until all ingredients are used, finishing with the sauce on top. Sprinkle shredded cheddar cheese over the final layer.

Step 6: Bake
Cover the casserole with foil and bake for 45 minutes. Remove the foil, top with a generous layer of French fried onions, and bake uncovered for another 10–15 minutes—until the potatoes are fork-tender and the top is golden and crispy.

Step 7: Serve
Let the casserole rest for a few minutes before slicing. Garnish with chopped parsley or sliced green onions if desired. Serve warm and enjoy the comforting goodness!
