Green Chile Cheeseburgers

This burger has held a special place at our dinner table for over fifteen years—and it never goes out of style. My husband first discovered it during a trip to New Mexico back in 2008, and he couldn’t stop raving about it. Naturally, I took on the challenge and recreated it at home.

1. Form the Patties
Let the ground beef come to room temperature for about 30 minutes. Divide it evenly into four portions and gently shape into patties about 4 inches wide. Press a small indent in the center of each to help them cook evenly. Season generously on both sides with salt and pepper.
2. Cook the Burgers
Preheat a skillet or griddle over medium-high heat. Cook the patties for 4 minutes without pressing or moving them. Flip and cook another 3–4 minutes for medium, or to your preferred doneness.
3. Heat the Green Chiles
While the burgers cook, warm the green chiles in a small saucepan over medium heat with the salt and garlic powder. Stir occasionally for 2–3 minutes until heated through.
4. Melt the Cheese
In the last minute of cooking, place a slice of cheese on each burger patty. Let it melt slightly before removing the burgers from the heat.
5. Assemble Your Burgers
Toast your buns if you like, then place each patty on a bun. Spoon the warm green chile mixture generously over the top. Add any extra toppings you enjoy. Serve hot and dig in!
