Ingredients:

Main Ingredients:

IngredientQuantity
Ripe bananas3
Crushed pineapple½ cup
Shredded coconut½ cup
Melted butter⅓ cup
Granulated sugar½ cup
Brown sugar¼ cup
Vanilla extract1 teaspoon
All-purpose flour2 cups
Baking soda1 teaspoon
Salt½ teaspoon
Ground cinnamon½ teaspoon

Optional Add-ins:

IngredientQuantity
Chopped macadamia nuts½ cup
Dried pineapple chunks¼ cup

Instructions:

  1. Preheat and Prepare the Pan:
Set your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. Make the Wet Mixture:
In a large bowl, mash the bananas until smooth. Stir in the crushed pineapple, coconut, melted butter, granulated and brown sugars, and vanilla extract. Mix until everything is well blended.
  3. Mix Dry Ingredients Separately:
In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Combine Wet and Dry:
Gradually fold the dry ingredients into the banana mixture. Stir gently until just incorporated—avoid overmixing to keep the bread light and tender.
  5. Add Extras (Optional):
If using, gently stir in macadamia nuts and dried pineapple for added texture and flavor.
  6. Bake the Loaf:
Pour the batter into the prepared pan and smooth out the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and Serve:
Let the bread cool in the pan for about 10 minutes. Then, remove it and place it on a wire rack to cool completely before slicing.
