Cabbage Roll Soup

Ingredients

Instructions

Step 1: Brown the Meat
Heat the olive oil in a large pot over medium heat. Add the ground beef or turkey, season with salt and pepper, and cook for about 6 minutes, breaking it apart, until fully browned.

Step 2: Cook the Aromatics
Stir in the diced onion and minced garlic. Continue cooking for about 4 minutes, until the onion is soft and translucent.

Step 3: Add Remaining Ingredients
Add the sliced carrots, chopped cabbage, beef broth, uncooked rice, tomato sauce, bay leaf, brown sugar, parsley, and an additional pinch of salt and pepper. Stir well to combine.

Step 4: Simmer
Bring the soup to a boil, then lower the heat. Cover and simmer for 25–30 minutes, until the rice is tender and the flavors have fully developed.
