This Hearty Morning Hashbrown Bake is packed with crispy bacon, savory sausage, fluffy eggs, melted cheese, and tender hash browns—making it the perfect make-ahead breakfast for holidays or weekends. Hashbrown bakes are ideal for special occasions but simple enough for everyday breakfasts—similar to my Breakfast Sliders or Steak and Potato Hash. This recipe is easy to adjust for your family’s taste.

  • Meats: Crispy bacon bits paired with ground breakfast sausage (turkey sausage works well as a substitute).
  • Veggies: Onions, bell peppers, and a garnish of green onions or chives.
  • Hashbrowns: Use thawed frozen shredded hash browns.
  • Seasoning: Garlic powder, salt, black pepper, and optional red pepper flakes for a kick.
  • Cheese: A mix of shredded pepper jack and cheddar cheese.
  • Eggs & Milk: Large eggs whisked with whole or 2% milk.

Instructions

  1. Cook bacon pieces in a large oven-safe skillet until crispy. Remove and drain on paper towels.
  2. In the same skillet, cook the sausage along with onions and bell peppers until browned and softened.
  3. Whisk together eggs and milk in a large bowl until well combined.
  4. Drain most of the grease from the skillet, then add the frozen hash browns and seasonings.
  5. Stir in the cooked sausage, onions, peppers, and bacon.
  6. Sprinkle cheese evenly over the mixture, then pour the egg mixture on top. Bake until the casserole is nearly set. Add more cheese on top and bake a little longer until melted and bubbly.

Tips for Success

  • Thick-cut bacon adds extra flavor and texture.
  • Use a 12-inch oven-safe skillet (cast iron preferred) or a 9×13 baking dish. The hashbrowns might seem like a lot at first but will shrink as they bake.
  • If there isn’t much bacon grease left, drizzle 2 tablespoons of melted butter over the hashbrowns for extra richness.
  • Feel free to mix and match cheeses—you can’t go wrong with pepper jack and cheddar.
  • Swap bacon or sausage for diced ham if preferred. Any color bell pepper—green, red, yellow, or orange—works great.
  • Add red pepper flakes or hot sauce for some heat.
  • Serve alongside fresh fruit for a balanced meal.
