Ingredients

  • 4 pork chops, boneless or bone-in (1–1¼ inches thick)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • ½ tsp dried oregano
  • ½ tsp paprika
  • ¾ tsp salt
  • ½ tsp black pepper

For the Baby Potatoes

  • 1½ lbs baby potatoes, halved
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp dried parsley
  • ½ tsp salt
  • ¼ tsp black pepper

Optional Finish

  • 1 tbsp butter
  • Fresh parsley or thyme, for garnish

🍴 Instructions

  1. Preheat the oven
    Heat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
  2. Season the potatoes
    Toss the halved baby potatoes with olive oil, garlic powder, parsley, salt, and pepper. Spread them evenly in the baking dish.
  3. Prepare the pork chops
    Pat the pork chops dry. In a small bowl, combine olive oil, garlic, thyme, rosemary, oregano, paprika, salt, and pepper. Rub the mixture over both sides of the chops.
