These Golden Cheesy Potato Bites are a simple and flavorful appetizer or snack that’s perfect for using up leftover mashed potatoes. The combination of cheddar, chives, and Parmesan creates a cheesy and savory treat with a lovely golden crust.

Ingredients:

Instructions:

  1. Preheat oven and prepare pan: Preheat your oven to 400°F (200°C). Grease a mini muffin pan with cooking spray or butter.
  2. Combine ingredients: In a large bowl, combine the chilled mashed potatoes, large egg, shredded cheddar cheese, chopped chives, all-purpose flour, garlic powder, salt, and pepper. Mix well until all the ingredients are thoroughly combined.
  3. Roll into balls: Take small portions of the potato mixture and roll them into 1-inch balls.
  4. Coat with Parmesan: Place the grated Parmesan cheese in a shallow dish. Roll each potato ball in the Parmesan cheese, ensuring it is evenly coated.
  5. Place in muffin pan: Place the Parmesan-coated potato balls into the greased mini muffin pan. Gently press down on each ball to flatten it slightly.
  6. Bake: Bake in the preheated oven for 15-20 minutes, or until the potato bites are golden brown and slightly crispy on the edges.
  7. Cool and serve: Remove the mini muffin pan from the oven and let the Golden Cheesy Potato Bites cool slightly before serving warm. Enjoy these tasty little bites!
