Hey Buddy Ice Cream Cake

Hey Buddy Ice Cream Cake
This fun, nostalgic no-bake dessert is layered with classic Nutty Buddy bars, creamy chocolate and vanilla ice cream, and rich hot fudge. It’s the kind of treat that brings back memories of old-school ice cream parlors and is perfect for summer celebrations or whenever you want a dessert that’s both easy and impressive.
Ingredients
| Ingredient | Quantity |
|---|---|
| Nutty Buddy wafer bars | 2 boxes (24-count) |
| Vanilla ice cream | 1 tub (1.5 quarts) |
| Chocolate ice cream | 1 tub (1.5 quarts) |
| Hot fudge sauce | 1 jar (12 oz) |
| Chopped dry roasted peanuts | ¼ cup |
Instructions
Step 1: Line and Layer the Base
Line a 9×13-inch deep dish pan with plastic wrap, making sure it overhangs the sides for easy removal later. Create a single, snug layer of Nutty Buddy bars along the bottom—break a few in half if needed to fill in the corners.
Step 2: Vanilla & Fudge Layers
Let the vanilla ice cream soften slightly. Scoop it onto the Nutty Buddy base and spread evenly into a smooth layer. Drizzle hot fudge sauce over the top.
Step 3: Chocolate Layer
Place another layer of Nutty Buddy bars over the fudge. Let the chocolate ice cream soften, then spread it evenly across the top to create a smooth surface.
Step 4: Freeze to Set
Fold the excess plastic wrap over the top and cover tightly. Place the cake in the freezer for at least 6 hours, preferably overnight, until completely solid.
Step 5: Garnish & Serve
When ready to serve, lift the cake out using the plastic wrap. Transfer to a platter and remove the wrap. Sprinkle chopped peanuts over the top and, if desired, add an extra drizzle of hot fudge. Slice and serve immediately.
