These Dandy-Do Cookies are a simple and surprisingly addictive treat that combines the salty crunch of Ritz crackers with a sweet and chewy caramel-peanut topping. They’re easy to make and require no baking, making them a perfect quick dessert or snack.

Ingredients:

Instructions:

  1. Prepare baking sheet: Line a cookie sheet with parchment paper. Arrange the Ritz crackers in a single layer on the prepared baking sheet. You may need more than one batch depending on the number of crackers in your sleeves.
  2. Combine caramel ingredients: In a small saucepan, combine the sweetened condensed milk, butter, and brown sugar.
  3. Cook caramel: Cook the mixture over medium heat for 7-8 minutes, stirring often to prevent sticking and ensure the sugar dissolves and the mixture starts to thicken.
  4. Add remaining ingredients: Reduce the heat to low and whisk in the milk, vanilla, and roughly chopped peanuts until the caramel mixture is smooth and the peanuts are evenly distributed. Cook for an additional 2 minutes, or until the mixture has thickened further. Remove the saucepan from the heat.
  5. Top the crackers: Use a cookie scoop or a spoon to place a dollop of the warm caramel-peanut mixture on top of each Ritz cracker.
  6. Cool completely: Allow the Dandy-Do Cookies to cool completely at room temperature until the caramel has set and hardened. This will take some time, so be patient.
  7. Store: Once fully cooled, store the Dandy-Do Cookies in an airtight container at room temperature. Enjoy this sweet and salty treat!
