These Iowa Party Bites are a simple yet incredibly flavorful appetizer perfect for any gathering. Creamy cheese, sweet corn, and mild chiles nestled in crunchy Tostitos scoops, topped with Parmesan, make for a satisfying and easy-to-eat snack.

Ingredients:

Garlic Powder1 teaspoon
Salt1 teaspoon
Black Pepper½ teaspoon
Grated Parmesan Cheese½ cup

Instructions:

  1. Preheat oven and prepare baking sheets: Preheat your oven to 425 degrees F (220 degrees C). Lightly grease two large baking sheets or line them with parchment paper.
  2. Arrange chips: Tightly arrange the Tostitos Scoops tortilla chips on the prepared baking sheets, ensuring they are cup-side up.
  3. Prepare the filling: In a large mixing bowl, combine the softened cream cheese, shredded mozzarella cheese, egg, drained sweet corn, green chiles, garlic powder, salt, and black pepper. Mix thoroughly until all the ingredients are well combined and the mixture is smooth.
  4. Fill the chips: Use a spoon to scoop the cheese and corn filling into each tortilla chip, using about 1 tablespoon of filling per chip.
  5. Top with Parmesan: Sprinkle the grated Parmesan cheese evenly over the tops of the filled tortilla chips.
  6. Bake: Bake in the preheated oven for 13-15 minutes, or until the tops of the filling begin to brown slightly and the cheese is melted and bubbly.
  7. Serve warm: Carefully remove the baking sheets from the oven.Allow the Iowa Party Bites to cool slightly before serving them warm. Enjoy!
