Calistoga Pasta Salad

Ingredients:

  • Chopped pecans — 1 cup
  • Broccoli — 1 lb
  • Chopped red onion — 1/3 cup
  • Bow-tie pasta — 8 oz
  • Seedless red grapes, halved — 2 cups
  • Bacon, cooked and crumbled — 8 slices

For the Dressing:

  • Mayonnaise — 1 cup
  • Honey — 1/4 cup
  • Apple cider vinegar — 1/4 cup
  • Salt — 1 teaspoon
  • Black pepper — 1/4 teaspoon

Instructions:

  1. Toast Pecans: Preheat your oven to 350°F (175°C). Spread the chopped pecans evenly on a baking sheet and toast for 5 to 7 minutes, stirring halfway through to ensure even browning. Let them cool completely.
  2. Cook Pasta: Boil a large pot of salted water. Add the bow-tie pasta and cook until al dente, following package instructions. Drain well.
  3. Prepare Broccoli: While the pasta cooks, separate the broccoli florets from the stems and chop them into bite-sized pieces. Peel the tougher outer layer of the stems and finely chop the tender part to add extra crunch.
  4. Combine Salad Ingredients: In a large bowl, mix together the chopped broccoli, warm drained pasta (warm pasta helps absorb the dressing), halved grapes, and chopped red onion.
  5. Make the Dressing: Whisk together the mayonnaise, honey, apple cider vinegar, salt, and black pepper in a small bowl until smooth and fully combined.
  6. Dress & Chill: Pour the dressing over the salad mixture and toss gently but thoroughly to coat everything evenly. Cover and refrigerate for at least 3 hours, preferably longer or overnight, to let the flavors meld.
  7. Finish & Serve: Just before serving, stir in the crumbled bacon and cooled toasted pecans. Toss gently one last time and enjoy your tasty Calistoga Pasta Salad!
