These Cabbage Pancakes are a savory and delicious way to enjoy your vegetables. They combine tender sautéed cabbage, carrots, and onions with a creamy batter, creating a flavorful and satisfying meal.

Instructions:

  1. Prepare the Vegetables:

    • Add Onion: Add the chopped onion to the pan and sauté until it becomes translucent.
    • Add Carrot and Cabbage: Add the grated carrot and grated cabbage to the pan. Stir well to combine with the onion. Continue to sauté until the vegetables are tender and slightly caramelized.
    • Season: Add 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of garlic powder to the vegetables. Stir to ensure the spices are evenly distributed.
    • Set Aside: Once the vegetables are cooked, turn off the heat and set the mixture aside.
  2. Prepare the Batter:
    • Combine Wet Ingredients: In a mixing bowl, add 200 ml of milk, 200 ml of cream, and 1 egg. Whisk together until well combined.
    • Add Baking Powder and Seasoning: Add a pinch of salt and 1 tablespoon of baking powder to the mixture. Stir well.
    • Gradually Add Flour: Begin adding the flour to the mixture, starting with 200 grams. Stir continuously to avoid lumps. You may need to add up to 300 grams to achieve the desired consistency. The batter should be smooth but thick enough to hold the vegetables.
  3. Combine Vegetables and Batter:
    • Mix Together: Add the sautéed vegetables to the batter. Gently fold the vegetables into the batter until everything is well combined.
  4. Cook the Pancakes:
    • Heat Pan: Heat a non-stick pan over medium heat and add a small amount of oil or olive oil to coat the bottom.
    • Add Batter: Spoon a small amount of the vegetable batter into the pan, spreading it out evenly to form a pancake. Cook for a few minutes until the bottom is golden brown.
    • Flip and Cook: Carefully flip the pancake over to cook the other side. Continue cooking until both sides are golden brown and the pancake is cooked through.
