Instructions
1. Preheat the Oven
Set your oven to 425°F (220°C) and prepare a baking sheet with parchment paper or a silicone liner.
2. Make the Spice Blend
In a small bowl, combine the chili powder, paprika, cumin, oregano, garlic powder, onion powder, and salt.
3. Cook the Steak
Rub the spice blend evenly onto the sirloin steak. Heat a bit of oil in a skillet over medium-high heat. Sear the steak until it reaches your preferred doneness—medium for the best tenderness works well. Let the steak rest for 5–10 minutes, then slice it thinly against the grain into bite-sized strips.
4. Assemble the Quesadillas
Place two tortillas on your baking sheet. Sprinkle each with ½ cup of shredded cheese.
Top the cheese with an even layer of sliced steak, followed by the black beans, corn, cherry tomatoes, and avocado.
Add the remaining shredded cheese over the top and cover with the remaining tortillas to form two large quesadillas.
5. Bake
Transfer the baking sheet to the oven and bake for 8–10 minutes or until the tortillas are golden brown and crisp, and the cheese inside is fully melted.
