Hashbrown Breakfast Casserole
Hearty, satisfying, and incredibly easy to make, this all-in-one breakfast casserole is packed with flavor and perfect for feeding a hungry crowd—or for prepping ahead for the week. With savory sausage, tender hashbrowns, creamy Gouda, and a fluffy egg base with a kick of green chili, it’s comfort food made simple for breakfast, brunch, or even brinner.

👩‍🍳 Instructions

1. Preheat and Prepare
Set your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with non-stick spray or butter.

2. Brown the Sausage
In a skillet over medium heat, cook the sausage until it’s browned and fully cooked through, breaking it into small crumbles. Drain off any extra grease and set the sausage aside.

3. Layer the Hashbrowns
If the hashbrowns are clumped together, break them up. Spread them in an even layer across the bottom of the prepared dish.

4. Add Cheese and Sausage
Sprinkle the shredded Gouda evenly over the hashbrowns. Follow with an even layer of the cooked sausage.

5. Whisk the Egg Mixture
In a large bowl, whisk the eggs with milk, garlic powder, onion powder, salt, and pepper until well combined and slightly frothy. Fold in the drained green chilis.

6. Assemble the Casserole
Pour the egg mixture over the layered ingredients in the baking dish. Use a spatula or the back of a spoon to press everything down gently so the egg mixture soaks through.

7. Bake It Up
Place the dish in the oven and bake for 45–55 minutes, or until the center is set and the top is golden and bubbling. A toothpick or knife inserted in the middle should come out clean.

8. Let It Rest
Remove the casserole from the oven and let it sit for 5–10 minutes. This makes it easier to slice and helps the layers hold together.

9. Serve and Enjoy
Slice into portions and serve warm. Pair it with fresh fruit, toast, or a crisp salad for a balanced meal any time of day.
