These fritters make a delicious way to use leftover or canned chicken. Tender shredded chicken is blended with a blend of spices and breadcrumbs, then fried until beautifully golden and crispy.
Crispy Chicken Fritters
Ingredients:
- Shredded chicken (or canned chicken, drained) — 2 cups
- Dijon mustard — 1 tablespoon
- Large egg — 1
- Dried thyme — 1 teaspoon
- Breadcrumbs — 1 cup
- Onion powder — 1 teaspoon
- Garlic powder — 1 teaspoon
- Salt and black pepper — to taste
- Oil — for frying
Directions:
- Prepare the Chicken Base: In a mixing bowl, combine the shredded chicken, Dijon mustard, and egg. Stir thoroughly until the mixture is smooth and well blended.
- Add Flavor and Binder: Sprinkle in the dried thyme, onion powder, garlic powder, salt, and pepper. Mix well. Gradually fold in the breadcrumbs, mixing until the mixture is firm enough to hold together but still moist. Add extra breadcrumbs if it feels too wet.
- Form the Fritters: Shape the mixture into small patties, roughly 2 inches across, using your hands or a spoon. Set them aside on a plate or tray.
- Heat the Oil: Pour about a quarter-inch of oil into a large skillet and heat over medium-high. Test the temperature by dropping a small bit of mixture in—it should sizzle immediately.
- Cook the Fritters: Carefully place the fritters in the hot oil without overcrowding the pan. Fry each side for 3-4 minutes until they develop a crisp, golden crust. Remove and drain on paper towels.
- Serve: Serve your crispy chicken fritters warm alongside your favorite sauces like ranch, honey mustard, or a spicy aioli for dipping.
