Amazing Forgotten Chicken

This classic “forgotten” chicken recipe truly lives up to its name. With tender chicken baked over a creamy, flavorful rice base, it’s a no-fuss oven meal that practically cooks itself. Just assemble, cover, and let the oven do the work—perfect for hectic evenings when comfort food is a must.

Ingredients

  • Boneless, skinless chicken breasts — 1 lb
  • Minute rice (white or brown) — 2 cups
  • Cream of mushroom soup — 1 can (10½ oz)
  • Cream of chicken soup — 1 can (10½ oz)
  • Water — 1 can (measured using an empty soup can)
  • Butter — 1 tablespoon
  • Lipton onion soup mix — 1 envelope

Instructions

Step 1: Prepare the Baking Dish
Preheat your oven to 350°F (175°C). Use the butter to generously grease a 9×13-inch baking dish.

Step 2: Mix the Rice Base
In a medium bowl, stir together the cream of mushroom soup, cream of chicken soup, water, and rice until smooth and evenly combined.

Step 3: Assemble
Spread the rice mixture evenly across the bottom of the prepared dish. Lay the chicken breasts directly on top of the rice.

Step 4: Add Seasoning
Sprinkle the onion soup mix evenly over the chicken breasts, coating them well for maximum flavor.

Step 5: Bake
Cover the dish tightly with aluminum foil to seal in moisture. Bake for 1 to 1½ hours, until the chicken is fully cooked and tender and the rice is creamy.

Step 6: Rest and Serve
Remove from the oven and let the dish rest for about 5 minutes, allowing the rice to absorb any remaining liquid. Serve warm and enjoy this comforting, hands-off meal.
