It’s been decades since this dish fell out of fashion which means many modern diners haven’t had it

This Cabbage Soup with Smoked Sausage is a comforting and satisfying soup packed with vegetables and smoky sausage flavor. The slight sweetness from the brown sugar balances the savory elements, making it a perfect meal for a chilly evening.

Ingredients:

Chicken bouillon cube1
Potatoes2 medium
Packed brown sugar1 tablespoon
Black pepper1/2 teaspoon
Caraway seeds1/4 teaspoon
Dried thyme1/4 teaspoon
Heavy cream1/3 cup

Instructions:

  1. Brown the Sausage: Heat the olive or vegetable oil in a Dutch oven over medium heat. Add the sliced smoked Kielbasa sausage and cook until browned on all sides. Remove the sausage from the Dutch oven with a slotted spoon and set it aside.
  2. Sauté Vegetables: Add the butter to the grease remaining in the Dutch oven. Add the thinly sliced carrots, chunks of corn on the cob, and chopped sweet onion. Cook over medium heat, stirring occasionally, until the vegetables begin to soften. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add Cabbage: Add the chopped green cabbage to the Dutch oven and cook and stir for a minute or two, until the cabbage starts to wilt slightly.
  4. Add Liquids and Potatoes: Add the peeled and cubed potatoes, chicken broth, water, and chicken bouillon cube to the Dutch oven. Stir to combine.
  5. Simmer: Bring the soup mixture to a simmer over medium-high heat. Once simmering, reduce the heat to low, cover the Dutch oven, and cook until the potatoes are tender, about 15-20 minutes.
  6. Add Remaining Ingredients: Return the browned sausage to the Dutch oven. Stir in the packed brown sugar, black pepper, caraway seeds (if using), and dried thyme.
  7. Finish with Cream: Bring the soup back to a gentle simmer. Stir in the heavy cream. Heat through gently, but do not boil.
  8. Serve: Ladle the Cabbage Soup with Smoked Sausage into bowls and serve hot. Enjoy this hearty and flavorful soup!
