This Classic Blackberry Cobbler is a cozy, old-fashioned dessert that brings together juicy, sweet-tart blackberries and a soft, golden cake-like topping that bakes perfectly around the fruit. Simple, comforting, and always a crowd-pleaser.

Ingredients

For the Blackberry Filling:

Step 1: Preheat the Oven
Set your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prepare for assembly.

Step 2: Make the Blackberry Filling
In a large bowl, mix the blackberries with sugar, lemon juice, and cornstarch. Stir gently until the berries are evenly coated. Pour the mixture into the prepared baking dish.

Step 3: Prepare the Batter
In a separate medium bowl, whisk together the flour, sugar, baking powder, and salt. Add the melted butter, milk, and vanilla extract. Stir until the batter is smooth and just combined — don’t overmix.

Step 4: Assemble & Bake
Drop spoonfuls of the batter evenly over the blackberry mixture. Place the dish in the preheated oven and bake for 40–45 minutes, or until the topping is golden brown and the fruit is bubbling around the edges.

Step 5: Cool & Enjoy
Allow the cobbler to rest for 10–15 minutes before serving. Serve warm with a scoop of vanilla ice cream or enjoy at room temperature for a classic, homestyle dessert experience.
