🍒 Cherry Pie Bars

These Cherry Pie Bars take the charm of a classic cherry pie and transform it into an easy, shareable dessert. A buttery, tender crust cradles a luscious cherry filling, all topped with a smooth almond glaze that adds the perfect finishing touch.


🧾 Ingredients

Crust

  • Butter, softened – 1 cup
  • Sugar – 2 cups
  • Eggs – 4
  • Vanilla extract – 1 tsp
  • Almond extract – ¼ tsp
  • All-purpose flour – 3 cups
  • Salt – 1 tsp

Filling

  • Cherry pie filling – 2 cans (21 oz each)

Glaze

  • Powdered sugar – 1 cup
  • Vanilla extract – ½ tsp
  • Almond extract – ½ tsp
  • Milk – 2 tbsp

👩‍🍳 Instructions

1. Preheat & Prepare
Preheat oven to 350°F (175°C). Grease and flour a 15×10×1-inch baking pan, or coat it with non-stick spray.

2. Cream Butter & Sugar
In a large mixing bowl, beat together the butter and sugar until light, creamy, and fluffy.

3. Add Eggs & Flavorings
Mix in the eggs, one at a time, blending well after each addition. Stir in the vanilla and almond extracts.

4. Combine Dry Ingredients
In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture, stirring just until combined.

5. Assemble the Bars
Spread about 3 cups of the batter evenly across the bottom of the prepared pan. Spoon the cherry pie filling evenly over the crust, then drop the remaining batter by spoonfuls over the top.

6. Bake
Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. (If using a 9×13-inch pan, add a few extra minutes to the baking time.)

7. Cool
Allow the bars to cool completely in the pan on a wire rack.

8. Prepare the Glaze
In a small bowl, whisk together the powdered sugar, vanilla extract, almond extract, and milk until smooth and pourable.

9. Drizzle & Serve
Drizzle the glaze over the cooled bars. Let it set before slicing into squares. Enjoy this sweet, buttery treat with a cup of coffee or a scoop of vanilla ice cream!
