Easy Breakfast Sausage Casserole
Hearty, cheesy, and packed with savory sausage flavor, this breakfast casserole is perfect for feeding a group or enjoying a laid-back weekend brunch. With fluffy eggs, melted cheese, and a base of soft, toasted bread, it’s comfort food you can prep ahead and bake fresh in the morning.

For the Casserole:

1. Preheat and Prep
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter to prevent sticking.

2. Cook the Sausage
In a skillet over medium heat, brown the sausage, breaking it into crumbles as it cooks. If using onions, stir them in and sauté for 3–4 minutes until softened. Drain off excess grease and set the mixture aside.

3. Whisk the Egg Mixture
In a large bowl, whisk together the eggs, milk (or half and half), salt, pepper, and ground mustard (if using) until frothy and well blended.

4. Assemble the Layers

  • Spread the cubed bread evenly across the bottom of your greased baking dish.
  • Spoon the sausage (and onion) mixture over the bread layer.
  • Sprinkle 1½ cups of shredded cheese over the top.
  • Slowly pour the egg mixture over everything, pressing down gently to help the bread absorb the liquid.
  • Finish with the remaining ½ cup of cheese sprinkled over the top.

5. Bake Until Golden
Transfer the casserole to your preheated oven and bake for 40–45 minutes. The top should be golden brown and the center should be fully set. To test, insert a knife—if it comes out clean, it’s ready.

6. Garnish and Serve
Let the casserole rest for 5 minutes before slicing. Sprinkle with chopped parsley if desired, and serve warm for a comforting, crowd-pleasing breakfast.
