This Cinnamon Swirl Apple Fritter Bread combines the comforting flavors of apple fritters with the ease of a loaf cake. A tender cinnamon-swirled batter studded with chunks of apple and topped with a sweet glaze makes for a delightful treat any time of day.

Ingredients:

Salt1/4 teaspoon
Granny Smith apple1

Glaze:

Instructions:

  1. Preheat Oven and Prepare Pan: Preheat the oven to 350˚F (175°C). Line a loaf pan with parchment paper, leaving an overhang for easy removal. Set aside.
  2. Make Filling/Topping: In a small bowl, combine the light brown sugar, ground cinnamon, and ground nutmeg (if using). Mix well to combine and set aside.
  3. Make Cake Batter: In a large bowl, combine the granulated sugar, melted and cooled unsalted butter, sour cream (at room temperature), eggs (at room temperature), milk (at room temperature), and vanilla extract. Mix by hand or with an electric mixer until the ingredients are just combined and smooth. Set aside.
  4. Combine Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix the batter.
  6. Prepare Apples: Peel, core, and chop the Granny Smith apple into approximately 1/2 inch cubes.
  7. Add Apples to Batter: Add all but a small handful of the chopped apples to the cake batter and gently fold them in until evenly distributed.
  8. Assemble the Bread: Pour half of the apple batter into the prepared loaf pan and smooth it out into an even layer. Sprinkle half of the cinnamon-sugar filling evenly over the batter. Use a flat butter knife to cut swirls through the batter and filling. Top with the remaining apple batter and smooth it out again into a single layer. Sprinkle the reserved chopped apples over the top, followed by the remaining cinnamon-sugar mixture. Use the butter knife again to cut swirls through the top layer of batter and filling.
  9. Bake the Bread: Bake in the preheated oven for 50 to 55 minutes, or until a toothpick inserted into the middle of the bread comes out clean.
  10. Cool the Bread: Let the bread cool in the loaf pan on a wire rack for 10 to 20 minutes before attempting to remove it.
  11. Make the Glaze: While the bread is cooling, prepare the glaze. In a small bowl, add the sifted icing sugar. Whisk in hot water, one teaspoon at a time, until you reach a smooth, pourable consistency.
  12. Glaze and Serve: Once the bread has cooled slightly, spoon or drizzle the prepared glaze evenly over the top of the loaf. Let the glaze set for 5 to 10 minutes before slicing and serving. Enjoy this delicious Cinnamon Swirl Apple Fritter Bread!
