My grandmother used to make these cookies but I never got the recipe from her

These Florentine Lace Cookies are delicate, elegant, and wonderfully chewy. They bake into thin, lacy rounds that can be left flat or gently curved, then sandwiched with a luscious chocolate ganache filling.


Florentine Lace Cookies

Ingredients:

For the Cookies:

Dark, Milk, or White Chocolate Chips8 ounces
Heavy Cream⅓ cup
Vanilla Extract1 teaspoon

Instructions:

Making the Cookies:

Step 1: Preheat Oven (5 minutes):
Set your oven to 350°F (175°C) and prepare baking sheets by lining them with parchment paper or silicone mats.

Step 2: Butter Mixture (5 minutes):
In a small saucepan over medium heat, melt the butter. Stir in the brown sugar and corn syrup or honey. Cook, stirring constantly, until the mixture is smooth and bubbling, about 1-2 minutes.

Step 3: Mix Dry Ingredients (4 minutes):
In a separate bowl, whisk together almond flour and salt. Remove the butter mixture from heat, stir in the vanilla extract, and allow to cool slightly.

Step 4: Combine Batter (2 minutes):
Pour the cooled butter mixture into the almond flour mixture and whisk until combined. Then, add the egg white and whisk until smooth.

Step 5: Bake Cookies (15 minutes):
Drop teaspoonfuls of batter onto the prepared sheets, spacing them about 3 inches apart. Flatten each mound gently with the back of a spoon into thin circles about 2-3 inches wide. Bake for 8-10 minutes until edges turn golden. Let cookies cool on the sheets for 5 minutes to firm up.

Step 6: Shape the Cookies (optional, 5 minutes per cookie):
While still warm and pliable, carefully lift cookies with a spatula and drape over a rolling pin or bottle to curve them for filling. Let cool fully to hold shape. Skip if making flat sandwich cookies.


Making the Ganache Filling:

Step 7: Heat Cream (5 minutes):
In a small pan, warm the heavy cream over medium heat until it just starts to simmer. Place chocolate chips in a heatproof bowl.

Step 8: Combine Ganache (1 minute):
Pour hot cream over the chocolate and let sit for 1-2 minutes. Add vanilla extract, then stir until the chocolate melts completely and the ganache is smooth.


Assembling the Cookies:

Step 9: Fill Cookies:
Once cookies are fully cooled, spoon a generous amount of ganache onto one cookie’s flat side. Top with another cookie, gently pressing to spread the filling evenly to the edges.

Step 10: Set and Serve:
Place the finished sandwich cookies on a wire rack or parchment-lined tray and allow the ganache to set before serving.
