This Shrimp Scampi Casserole captures all the classic flavors of traditional shrimp scampi but with the added convenience and cheesy richness of a baked dish. Succulent shrimp are simmered in a luscious garlic lemon butter sauce, then topped with a blend of melted cheeses and baked until golden and bubbling. It’s a comforting yet elegant meal that comes together quickly and easily.

Shrimp Scampi Casserole
Ingredients:
For the Shrimp Scampi:

  • 1 lb large shrimp, peeled and deveined (tails optional)
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup heavy cream
  • Juice of 1 lemon (about 2–3 tbsp)
  • Zest of 1 lemon
  • ¼ cup dry white wine (optional, or extra chicken broth)
  • Salt, to taste
  • Pepper, to taste
  • ¼ tsp red pepper flakes (optional)

For the Cheese Topping:

  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh parsley, chopped (plus more for garnish)

Suggested Accompaniments:

  • Pasta
  • Rice
  • Crusty bread for soaking up sauce

Instructions:

  1. Prepare Oven and Dish
    Preheat the oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the Shrimp
    In a large skillet, melt butter and olive oil over medium heat. Add garlic and sauté about 1 minute until fragrant, avoiding burning. Add shrimp and cook 2–3 minutes per side until pink and opaque. Cook in batches if needed to avoid overcrowding. Remove shrimp and set aside.
  3. Make the Sauce
    In the same skillet, pour in chicken broth, heavy cream, lemon juice and zest, and white wine (or extra broth). Stir and simmer gently for 3–4 minutes until slightly thickened. Season with salt, pepper, and red pepper flakes to taste.
  4. Combine and Assemble
    Return shrimp to the skillet and toss to coat evenly with sauce. Transfer mixture to the prepared baking dish, spreading evenly. In a small bowl, mix mozzarella, Parmesan, and parsley, then sprinkle over the shrimp.
  5. Bake
    Place casserole in the oven and bake 10–12 minutes until cheese is melted, bubbly, and golden.
  6. Serve
    Remove from oven and garnish with additional parsley. Serve hot alongside pasta, rice, or crusty bread to soak up every last bit of sauce.
