Crab-Stuffed Cheddar Bay Biscuits with Lemon Butter

Lemon Butter:

Instructions:
- Prepare the biscuit dough according to the package instructions and set aside.
- Preheat your oven to 375°F (190°C). Lightly grease two muffin tins with nonstick spray.
- In a mixing bowl, combine lump crab meat, paprika, onion powder, mustard, mayonnaise, and crushed Ritz crackers. Mix thoroughly, adding a little extra mayonnaise if the mixture seems dry.
- Lightly dust your hands with flour. Scoop some biscuit dough and shape it into a small cup.
- Spoon a generous portion of the crab filling into the biscuit cup.
- Cover the crab mixture with more biscuit dough, pinching the edges to seal completely.
- Repeat with the remaining dough and filling.
- Place each stuffed biscuit into the prepared muffin tins.
- Bake for 12 to 15 minutes until golden and cooked through.
- As soon as the biscuits come out of the oven, brush them with melted butter mixed with the lemon juice. Serve warm.
