Crab-Stuffed Cheddar Bay Biscuits with Lemon Butter

These biscuits elevate the classic Cheddar Bay flavor by adding a savory crab filling and a bright lemon butter glaze. They make an ideal appetizer or side for seafood enthusiasts.


Ingredients:

Biscuits:

Cheddar Bay Biscuit Mix1 package
Garlic1 tsp
Italian seasoning1 tsp

Crab Filling:

Lump crab meat1 pound
Paprika¼ tsp
Onion powder½ tsp
Mayonnaise½ cup + a bit more if needed
Mustard1 tbsp
Ritz crackers (crushed)½ sleeve
Grated Parmesan1 cup

Lemon Butter:

Melted butterAs needed
Lemon juice1 tsp

Instructions:

  1. Prepare the biscuit dough according to the package instructions and set aside.
  2. Preheat your oven to 375°F (190°C). Lightly grease two muffin tins with nonstick spray.
  3. In a mixing bowl, combine lump crab meat, paprika, onion powder, mustard, mayonnaise, and crushed Ritz crackers. Mix thoroughly, adding a little extra mayonnaise if the mixture seems dry.
  4. Lightly dust your hands with flour. Scoop some biscuit dough and shape it into a small cup.
  5. Spoon a generous portion of the crab filling into the biscuit cup.
  6. Cover the crab mixture with more biscuit dough, pinching the edges to seal completely.
  7. Repeat with the remaining dough and filling.
  8. Place each stuffed biscuit into the prepared muffin tins.
  9. Bake for 12 to 15 minutes until golden and cooked through.
  10. As soon as the biscuits come out of the oven, brush them with melted butter mixed with the lemon juice. Serve warm.
