This Farmer’s Casserole is a simple and satisfying dish packed with hash browns, ham, and cheese, all baked in a creamy egg custard. It’s a perfect make-ahead option for a hearty breakfast, brunch, or even a light dinner.

Ingredients:

Instructions:

  1. Preheat oven and prepare dish: Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish.
  2. Layer the casserole: Arrange the frozen hash brown potatoes evenly in the bottom of the prepared baking dish. Sprinkle the shredded pepperjack cheese over the potatoes, followed by the diced cooked ham and chopped green onions.
  3. Prepare the egg mixture: In a medium bowl, whisk together the beaten eggs, evaporated milk, ground black pepper, and salt until well combined.
  4. Pour egg mixture over layers: Pour the egg mixture evenly over the potato, cheese, and ham layers in the baking dish.
  5. Refrigerate (optional make-ahead): At this point, the dish can be covered tightly and refrigerated for several hours or overnight.
  6. Bake the casserole: Bake in the preheated oven for 40 to 45 minutes (or 55 to 60 minutes if the casserole was made ahead and chilled), or until a knife inserted into the center of the casserole comes out clean and the top is lightly golden.
  7. Rest and serve: Let the Farmer’s Casserole stand for 5 minutes before serving. This allows it to set slightly. Enjoy this hearty and flavorful dish!
