These Pistachio Blondies offer a delightful twist on the classic blondie, infusing them with the unique flavor and vibrant color of pistachios. The addition of instant pistachio pudding mix creates a wonderfully chewy texture and enhances the nutty taste, while white chocolate chips add a touch of sweetness. These bars are easy to make and perfect for anyone who loves the distinct flavor of pistachios.

  3. Add wet ingredients: Mix in the eggs one at a time, followed by the vanilla extract and the instant pistachio pudding mix. Beat until well combined.
  4. Combine dry ingredients: In a separate small bowl, sift together the flour, baking soda, and salt.
  5. Combine wet and dry: Slowly add the sifted dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.
  6. Fold in nuts and chips: Gently fold in the roughly chopped unsalted pistachios and the white chocolate chips until they are evenly distributed throughout the batter.
  7. Bake: Transfer the batter to the prepared 8×8-inch baking dish and spread it evenly. Bake in the preheated oven for 25-28 minutes, or until the blondies are cooked through the center. A toothpick inserted into the center should come out with moist crumbs attached.
