“My husband said these were the most delicious thing I’ve ever made!”

These Three Cheese Stuffed Mushrooms are a delectable appetizer featuring earthy crimini mushrooms filled with a creamy and flavorful mixture of cream cheese, mozzarella, and asiago, all topped with a crispy Parmesan and panko breadcrumb crust. They’re perfect for parties or as a savory starter.

Ingredients:

IngredientQuantity
Crimini mushrooms20-24
Olive oil1 tablespoon
Salt½ teaspoon
Black pepper½ teaspoon
Onion (minced)¼ cup
Garlic clove1
Cream cheese4 oz
Mozzarella cheese⅓ cup
Asiago cheese⅓ cup
Parmesan cheese½ cup
Italian seasoning1 teaspoon
Panko or breadcrumbs3 tablespoons
Butter (melted)2 tablespoons

Instructions:

  1. Preheat oven and prepare baking sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the mushrooms: Gently remove the stems from the crimini mushrooms and set the caps aside.
  3. Sauté the stems: Add the olive oil to a small skillet over medium heat. Chop the reserved mushroom stems finely and add them to the heated skillet. Cook for 3-4 minutes, stirring occasionally, until they begin to soften. Add the minced garlic and season with salt and pepper. Cook for 1 more minute until the garlic is fragrant. Remove the skillet from the heat.
  4. Make the cheese filling: In a large bowl, beat the softened cream cheese until smooth. Add the shredded mozzarella cheese, shredded asiago cheese, ¼ cup of the Parmesan cheese, and Italian seasoning. Mix well to combine. Add the cooked mushroom stem mixture to the cheese mixture and stir until everything is fully incorporated.
  5. Fill the mushroom caps: Transfer the cheese mixture to a ziplock bag or a piping bag. If using a ziplock bag, snip off one of the bottom corners to create an opening. Pipe or spoon the cheese filling into each of the mushroom caps, filling them generously.
  6. Prepare the topping: In a small bowl, mix together the remaining ¼ cup of Parmesan cheese, the panko breadcrumbs (or regular breadcrumbs), and the melted butter until the mixture is crumbly.
  7. Top the mushrooms: Dip the tops of the filled mushroom caps into the panko mixture, pressing lightly to help it adhere. Return the topped mushrooms to the prepared baking sheet.
  8. Bake: Bake in the preheated oven for 20-24 minutes, or until the tops of the stuffed mushrooms are golden brown and the mushrooms are tender.
  9. Serve: Serve the Three Cheese Stuffed Mushrooms immediately while they are hot and cheesy. Enjoy!
