Irish Pea Salad

Ingredients:

  • 4 cups frozen peas, thawed
  • 1 cup cheddar cheese, diced
  • ½ cup celery, chopped
  • ½ cup red bell pepper, chopped
  • ¼ cup red onion, finely chopped
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • Salt, to taste
  • Black pepper, to taste

Instructions:

  1. In a large bowl, mix together the peas, cheddar cheese, celery, red bell pepper, and red onion.
  2. In a smaller bowl, whisk mayonnaise, sour cream, apple cider vinegar, sugar, salt, and pepper until smooth and blended.
  3. Pour the dressing over the pea mixture and gently toss to evenly coat everything.
  4. Cover the bowl and refrigerate for at least one hour to let the flavors develop and chill the salad.
  5. Before serving, give the salad a gentle stir to combine the ingredients once more.
