My Kentucky friend shared this with me, and we couldn’t stop eating it

Kentucky Apple Cake

This wonderful Kentucky Apple Cake is a soft, spice-scented dessert filled with apples and walnuts, finished off with a glossy, buttery vanilla glaze while it’s still warm.


Ingredients

Ground cinnamon2 tsp
Buttermilk1/4 cup
Milk2–3 tbsp
Sugar (for cake)2 cups
Vanilla extract (for cake)1 tsp
Margarine (for cake)2 sticks
Baking powder2 tsp
Baking soda1/4 tsp
Salt1/8 tsp (plus a small pinch for apples)
All-purpose flour2 1/2 cups
Finely chopped apples (the juicier, the better!)3 cups
Light corn syrup1 tbsp
Chopped walnuts (for crunch)2 cups

For the Glaze

Margarine1/2 cup
Baking soda1 tsp
Sugar (for glaze)3/4 cup
Real vanilla extract (for glaze)1/4 cup

Directions

Step 1: Preheat the Oven
Warm your oven to 350°F (175°C) and grease a 9×13-inch baking pan generously.

Step 2: Mix the Wet Ingredients
In a large bowl, whisk the 2 eggs. Blend in the cinnamon, buttermilk, milk, and vanilla extract.

Step 3: Combine Dry Ingredients
Sift together the sugar, baking powder, baking soda, and salt. Stir this dry mixture into the egg mixture.

Step 4: Add Melted Margarine
Melt the margarine and pour it into the bowl, mixing well until everything is incorporated.

Step 5: Add the Flour
Gradually mix in the all-purpose flour, blending until the batter is smooth.

Step 6: Stir in Apples and Nuts
Fold in the chopped apples, pinch of salt, corn syrup, and walnuts. Mix until evenly distributed.

Step 7: Bake
Spread the batter evenly in your greased pan and bake for 45–50 minutes.

Step 8: Make the Glaze
While the cake bakes, prepare the glaze. In a small pan, melt the margarine, then add the baking soda, sugar, and vanilla. Stir constantly over low heat until the sugar has dissolved completely.

Step 9: Glaze the Cake
Once the cake is finished baking, pour the warm glaze over it while it’s still hot.

Step 10: Serve and Enjoy
Allow the cake to cool slightly before cutting into squares. Enjoy every moist, flavorful bite!
