“My mother-in-law hardly eats anything these days, but she tore this up!”

These Cheesy Chicken Fritters are a delicious and easy way to enjoy chicken.

They’re made with diced chicken, mozzarella cheese, and dill, all bound together with a simple batter and pan-fried to golden perfection.

Serve them with a creamy garlic aioli dip for an extra burst of flavor.

Ingredients:

Chicken Fritter Ingredients:

Salt1/2 tsp (or to taste)
Black pepper1/8 tsp
Extra light olive oil2 Tbsp (or high heat oil)

Garlic Aioli Dip Ingredients (Optional):

Instructions:

For the Chicken Fritters:

  1. Dice the chicken breasts into 1/3-inch thick pieces and place them in a large mixing bowl.
  2. Add the remaining batter ingredients to the bowl: eggs, mayonnaise, flour (or starch), shredded mozzarella, chopped dill, salt, and black pepper. Stir until well combined.
  3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight.
  4. Heat a large non-stick pan over medium heat and add the oil.
  5. When the oil is hot, add heaping tablespoons of the chicken mixture to the pan.
  6. Slightly flatten the tops of the fritters with the back of a spoon.
  7. Sauté the fritters uncovered for 3-4 minutes on the first side, then flip and sauté for 3 minutes on the second side, or until golden brown and cooked through.
  8. Repeat with the remaining fritters, adding more oil as needed.

For the Garlic Aioli Dip (Optional):

  1. Combine all the aioli ingredients in a small bowl or measuring cup: mayonnaise, pressed garlic, lemon juice, salt, and black pepper.
  2. Stir until smooth.
  3. Serve the chicken fritters warm with the garlic aioli dip.
