My mother in law used to make this. I think she got it from a newspaper

Rosalynn Carter’s Classic Cheese Ring
A beloved Southern party favorite, this savory cheese ring blends the bold flavor of sharp cheddar with the crunch of nuts and the creaminess of mayonnaise. Traditionally paired with strawberry preserves for a sweet contrast, it’s a standout appetizer at any gathering.
Ingredients:
Ingredient | Quantity |
---|---|
Sharp Cheddar Cheese, grated | 1 lb |
Pecans or Walnuts, finely chopped | 1 cup |
Mayonnaise | 1 cup |
Small Onion, grated | 1 small |
Black Pepper | To taste |
Cayenne Pepper | A dash |
Strawberry Preserves (optional) | 6 oz |
Instructions:
- Mix the Ingredients: In a large mixing bowl, combine the grated cheddar, chopped nuts, mayonnaise, grated onion, black pepper, and cayenne. Stir thoroughly until evenly blended.
- Shape the Ring: Transfer the mixture into a 5-cup ring mold, pressing it down and smoothing the top with a spatula.
- Chill: Cover the mold tightly with plastic wrap and place in the refrigerator for at least 5 hours, or ideally overnight, to set.
- Release from Mold: Once set, remove the plastic wrap. Invert the mold onto a serving platter. If the ring sticks, dip the mold briefly in warm water to help loosen it.
- Add Sweetness (Optional): Spoon strawberry preserves into the center of the ring, if using.
- Serve: Accompany with crackers or bread. Alternatively, shape the mixture into a cheese ball or other form as desired.
