This recipe takes inspiration from French onion soup and creates a cheesy and flavorful dish with tender chicken. It all comes together in a single skillet, making cleanup a breeze!

Cheesy French Onion Chicken: A Delicious One-Pan Wonder

Ingredients:

Instructions:

  1. Prep the Chicken: Season both sides of the chicken cutlets with salt, black pepper, and Italian seasoning.
  2. Sear for Golden Perfection: Heat olive oil in a large skillet over medium-high heat. Add the chicken cutlets and cook for 3-4 minutes per side, until golden brown and cooked through. Remove the chicken from the pan and set it aside for now.
  3. Caramelize the Onions: Reduce the heat to medium and add the butter to the same skillet. Let it melt, then add the sliced onions with a pinch of salt. Cook the onions, stirring occasionally, until they become soft and beautifully caramelized. This will take about 20-25 minutes.
  4. Flavor Boost with Garlic and Flour: Once the onions are caramelized, add the minced garlic and cook for another minute. Then, sprinkle the flour over the mixture and stir constantly to incorporate it. This will help thicken the sauce.
  5. Deglaze with Wine: Pour in the dry rosé or white wine, scraping up any browned bits stuck to the bottom of the skillet. Let the wine simmer and reduce for a few minutes.
  6. Add Broth and Simmer: Pour in the low-sodium beef broth and bring the mixture to a simmer. Let it simmer for about 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  7. Return the Chicken: Add the cooked chicken cutlets back to the skillet, nestling them into the delicious onion mixture. Spoon some of the onions and sauce over the chicken to coat them evenly.
  8. Melty Cheese Heaven: Top each chicken cutlet with a slice of Swiss cheese. Then, sprinkle the grated Parmesan cheese evenly over the entire dish. Cover the skillet with a lid and let the cheese melt for 2-3 minutes, or until bubbly and gooey.
