Low-Carb Hearty Hamburger Soup
Warm, filling, and full of flavor, this low-carb hamburger soup is the ultimate cozy meal. With seasoned ground beef and a rainbow of veggies simmered in a rich broth, it’s a quick one-pot dinner that delivers on both nutrition and taste.

| Fresh spinach or kale, chopped | 1 cup |
Step 1: Cook the Ground Beef
In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground beef and cook until fully browned, using a spoon to crumble it as it cooks.
Step 2: Sauté the Veggies
Add diced onion and minced garlic to the pot. Cook for about 2 minutes, until the onion softens. Stir in celery, carrots, and bell pepper. Let everything cook together for another 5 minutes, just until the vegetables begin to tenderize.
Step 3: Build the Soup Base
Pour in the diced tomatoes and beef broth. Add oregano, basil, salt, and pepper. Stir well, bring to a boil, then reduce heat and let the soup simmer for around 20 minutes so all the flavors can blend beautifully.
Step 4: Add the Greens & Finish
Toss in the chopped spinach or kale and simmer for another 5 minutes until the greens are soft and wilted. Taste and adjust seasoning if needed. Serve hot and enjoy!
